Hokkaido Common Octopus / Feta Cheese / Pineapple / Yogurt
The octopus is simmered in court-bouillon until tender, then sautéed.
The pineapple is caramelized and infused with the aroma of rosemary.
Served with a potato and feta cheese sauce.
Topped with a yogurt tuile.
