秋刀魚と茄子🍆
秋刀魚はシンプル塩焼きです。
肝はリコッタと合わせてソースに。
骨は乾燥させてクッキーに。
茄子はキャビアドオーベルジーヌ、タップナードを加えて、
ソースの仕上げにパルミジャーノ。
ローストした茄子の上に添えてます。

秋らしい1品です。

Sanma and Eggplant 🍆
Autumn sanma is simply grilled with salt.
The liver is combined with ricotta to create a sauce.
The bones are completely dried.
Eggplant, eggplant, eggplant.
Parmesan cheese is added to enhance the sauce.
Timbered eggplant is served on top of roasted eggplant.
