川越三元豚バラ肉のペルシヤード
ソースはシンプルにグラスドビアン
川越三元豚は今回初めて使ってみましたが、
とても美味しいお肉でした。
脂の溶け具合も歯応えありながらジューシーなお肉もバランス良く、どんな料理にも相性良さそうです。

昨日は川越百万灯祭り、今年は1日だけの開催ということで、
少し心配もしてましたが、スタッフも頑張ってくれて、
無事終えることができました。

Kawagoe Sangen pork belly Persian
The sauce was a simple glace de bien
This was the first time I used Kawagoe Sangen pork, but it was very delicious.
The meat was well-balanced with the melted fat and the chewy yet juicy meat, and it seems to go well with any dish.

Yesterday was the Kawagoe Hyakumanto Festival, and this year it was only held for one day, so I was a little worried, but the staff worked hard and we were able to finish it safely.
